Ingredients
1/4 cup Just Mayo (or other vegan mayo)
2 tbsp lime juice
1/2 tsp ground cumin
1 can black beans, rinsed and drained
1-2 cups frozen corn (or a can)
1 cup quartered grape tomatoes
2 small avocados, diced
1/2 cup small onion, chopped red or sweet
2 tbsp fresh cilantro
1 tsp chopped jalapeno (optional)
Salt and pepper to taste
Directions
Combine together and chill. Serve with chips.
